1 Graham Cracker Crust
4 tsp. grated lime zest
1/2 cup key lime juice (3-4 limes, or you may be able to find bottled key lime juice if you are not where stores carry key limes - you can also substitue regular limes)
4 large egg yolks
1 (14 oz.) can sweetened condensed milk

Directions:
Whip yolks and zest about 2 minutes. Beat in condensed milk then lime juice. Pour into pie crust. Thicken for 15 minutes at room temperature. Bake at 350 degrees for 15-17 minutes (pie will be set but still wiggly). Refrigerate or freeze at least three hours before serving. Remove about 15 minutes before serving. Top with whipped cream if desired.
