10 large or 8 med. red sweet peppers
3 c. sugar
1 Tbsp. salt
1 c. apple cider vinegar

Directions:
Directions:
- Put peppers through food processor (like pickle relish). Put in a glass bowl with juices and salt. Let stand 4 hours.
- Drain off juice.
- Replace in pot, add vinegar and sugar, boil for one hour until thickened. It gets like a syrup when dripping from a spoon.
- Put in jars, let cool.
- Pour a little paraffin on top and let it cool. Put a second layer of paraffin on top. (It can also be processed in a hot water bath instead of using the paraffin).
- To serve: spread the relish over an 8 oz. block of cream cheese and serve with crackers.
