1 whole chicken, cut up
1 large onion, sliced
1 red pepper, sliced
1 green pepper, sliced
1 jar (32 oz) spaghetti sauce with 3-4 cheeses
1 can eggplant caponate (eggplant appetizer)
1/2 cup pitted kalamata olives
1 lb cooked spaghetti
1/4 cup parmesan cheese, divided

Directions:
Directions:
Brown chicken in large skillet in 2 Tbsp olive oil. Remove chicken from pan. Add onion and peppers, saute until tender (about 5 minutes). Add spaghetti sauce, eggplant caponata, olives, and 2 Tbsp. parmesan cheese to pan. Simmer 5 minutes. Return chicken to pan, simmer 25 minutes or until chicken is done.
Serve with spaghetti and remaining parmesan cheese.
