French Strawberry Pie Recipe

9-inch pastry shell
1 quart strawberries
3 oz. cream cheese
1 1/4 c. sugar
3 TBSP corn starch
1 TBSP lemon juice
1/2 c. heavy cream
1 TBSP confectioners' sugar

1. Beat cream cheese with fork until smooth and spread over shell.
2. Stand 1/2 of the whole berries in shell.
3. Mash the rest and measure juice. Add water to make 1 1/2 cup liquid.
4. Mix sugar with the corn starch in pan and stir in berry mixture and lemon juice.
5. Cook over medium heat until thick and clear.
6. Cool 10 minutes and pour over berries.
7. Chill 3 hours until firm.
8. Whip cream and spoon in ring around pie.
