4 lbs red beans
2 lbs chunky ham seasoning
2 lbs smoked turkey necks
2 lbs andouille sausage
2 lbs smoked sausage
6 cups chopped onions
2 cups green onions
1 1/2 cups finely chopped bell pepper
1 1/4 cups celery
3 tbsp chopped garlic
2 cups all purpose four
2 cups peanut oil
3/4 cups chopped parsley
24 cups hot water

Directions:
Directions:
Pre-boil beans until tender. Pass them in blender with liquid from beans. Heat oil in pot and add flour on medium fire until it turns the color of peanut butter. Add onions, let them simmer for 5 minutes, and then add the rest of the seasonings except the parsley. Add turkey necks and 16 cups of hot water and bring to a boil. Boil for 20 minutes and then add andouille and smoked sausage. Boil for 15 more minutes, then add 8 more cups of hot water. Add ham seasoning and cook 30 more minutes. Taste and add salt or pepper as needed. Server over hot rice.
