Dough:
3 cups flour
1 tsp. salt
1 cup of warm milk or liquid
from potatoes
2 tbsp. Melted butter
1 egg well beaten

Directions:
Directions:
Mix warm milk or liquid with butter and beaten egg. Sift flour and salt; pour in liquid. Make a soft dough,
cover and let rest for about an hour.
Filling:
Cook 12 medium size potatoes drain
and mash them. Add grated yellow cheddar
cheese or cottage cheese to taste, also some
fried onion, if you like. Roll out dough as for
cookies, cut out in circles. Put about 1 tsp. filling
on each cookie. Fold in half and pinch edges. Cook
in boiling salted water until they raise to the top,
about 10 minutes. Serve with melted butter poured
over them or with sour cream.

These perogies can be made and placed on a cookie sheet to freeze and the bag, store in freezer and at a later date. Note: put a little cooking oil in the water when cooking the perogies. It helps them from sticking together.
