1 pkg. (10 oz.) baby spinach
1 lb. bacon, cooked crisp and crumbled
1 jar (2 oz.) pimientos, drained
2 small avocados, cut into chunks
1 package (4 oz.) crumbled bleu cheese
1/2 c. olive oil
1/4 c. balsamic vinegar
1 tsp. sugar
1 tsp. Dijon mustard
salt and pepper to taste

Cut bacon into small chunks. I use a large microwavable bowl (Pyrex) and cover the bottom with paper towels to soak up grease. Place bacon in bowl and cover with another paper towel. Cook in microwave, in 5-minute increments, stirring each time until cooked crisp.

In a large bowl, toss together spinach, bacon, pimientos, avocado and bleu cheese. In a small bowl, whisk together remaining ingredients. Drizzle over salad and toss to coat.
