1 1/4 cup cornmeal
1 3/4 lbs okra, trim ends and slice into 1/2 disk
Cooking spray
Buttermilk
salt and pepper to taste
Cayenne pepper (optional)

Directions:
Directions:
Soak okra in buttermilk (enough to almost cover the okra) Drain; roll the okra in cornmeal (okra must be moist for cornmeal to coat good). Sprinkle with salt pepper and cayenne pepper to taste. Spread evenly on a sprayed baking sheet. Place in a 450 oven for 30-40 minutes stirring occasionally (about every 10-12 minutes) until crisp.
