8 large potatoes
1/2 of a purple onion
3 stalks of celery
7 boiled eggs

DRESSING:
2 egg yolks
3/4 c vinegar
1 c sugar
1 tsp dry mustard
1 tsp flour
1 T salt
1 pt real mayonnaise
1 tsp celery seed

Directions:
Directions:
Boil potatoes with skins on. When cool, peel and chop. Add chopped onion and chopped celery.

Dressing:
Beat egg yolks: add vinegar.Combine with dry ingredients.Bring to a boil. Cool. Mix in a blender with mayonnaise and celery seed. Pour over potato mixture and serve the following day.
