CHOCOLATE MERINGUE COOKIES

Chop finely 6 oz nuts with 1 T sugar

Beat 2 egg whites until stiff

Add 1 C sugar and 6 T cocoa

Fold in nuts

Drop by balls, then roll into kisses. Bake at 325 until slightly cracked - 10-14 minutes.

Let cool and firm up.


Ganache Filling

Pour 6 T heavy cream heated over 3 oz semi-sweet chocolate. Stir until thickened. Make a hole in center of kiss and fill with ganache. Use #11 round tip and decorating bag, putting about t in each cookie. Spread ganache on bottom of one kiss and stick another kiss onto it.
