1lb Ground Beef or Turkey
1 Chopped pepper (any color)
1 Chopped onion
1 Envelope taco seasoning
cup Water
1 can (15oz) black beans rinsed and drained
1 can (14.5oz) Mexican diced tomatoes undrained
6 Flour tortillas
1 can (16oz) refried beans
3 cups Mexican cheese

Directions:
Directions:
In a large skillet brown the hamburger, pepper and onions. Drain, add water and taco seasoning mix. Simmer uncovered for 2 minutes. Stir in black beans and tomatoes simmer uncovered for 10 minutes.

Place two tortillas in a greased 13X9 pan. Spread with half of the refried beans and beef mixture; sprinkle with 1 cup cheese. Repeat layers. Top with remaining tortillas and cheese. Bake at 250 degrees for 25-30 minute or until heated through and cheese is melted.
