2c.zucchini
3 eggs
1tsp. vanilla
1c. vegetable oil
2c. sugar
1tsp. salt
1tsp.baking powder
1tsp. baking soda
1Tbsp. cinnamon
1/2c. chopped walnuts
3c. flour

Directions:
Directions:
Stir together by hand all ingredients, except flour. After well blended, add flour a little at a time; stirring until well blended. Pour into greased muffin tins 3/4 full. Bake at 350 for 20-25 min.
