3 C All Purpose Flour
1 T Baking Powder
1/2 t Baking soda
1/2 t salt
1 t cinnamon
1 t nutmeg
2 C Sugar
3/4 C Veg oil
3 lg eggs, lightly beaten
2 t vanilla extract
3 C shredded zucchini (about 2 large)
1 C chopped pecans or walnuts

Directions:
Directions:

Combine 1st 6 ingredients in a large bowl. Make a well in center of mixture.
Combine sugar, oil, eggs, and vanilla. Stir well. Add to dry ingredients, stirring until just moistened. Stir in zucchini and pecans.
Spoon batter into two lightly greased loaf pans.
Bake at 350 for 50 mins, or until they test done. Cool in pans on wire racks 10 mins, remove from pans, and cool completely on wire racks.
