2 c flour
1 beaten egg
c sugar
1 tsp grated orange peel
1 tsp baking powder
c orange juice
1 tsp salt
2 T oil
tsp soda
1 c coarsely chopped fresh cranberries
c chopped pecans (optional)

Directions:
Directions:
Sift dry ingredients together. Combine egg, orange peel, orange juice and oil in separate bowl. Add to dry ingredients and stir until moistened. Fold in cranberries and nuts. Bake in greased 9x5" loaf pan at 350 for 60 minutes. Remove from pan and cool. Wrap in plastic wrap and store overnight in refrigerator.
