1/2 Cup chopped onion
1/2 Cup green pepper (optional)
1 clove minced garlic
1 Tbsp olive oil
28 oz can tomatoes (undrained)
3/4 Cup rice
1 tsp. sugar
1 tsp. chili powder
1/8 tsp pepper

Directions:
Directions:
In large skillet saute onion, green pepper and garlic in olive oil until tender. Add tomatoes, rice, sugar, chili powder and pepper. Cook until rice is tender. Add parsley for color if desired
