For the Cheese Sauce:
2 T butter
2 1/2 T flour
2 C milk
1 C shredded sharp cheddar cheese
1/4 t salt
1/8 t pepper

For the Casserole:
1 lb bacon
1/4 c chopped green onions
3 T butter
12 eggs, beaten
1 4oz. can mushrooms, drained
1/4 t salt
1/8 t pepper

Directions:
Directions:
To prepare the cheese sauce:
Melt the butter in a saucepan. Stir in the flour. Cook until bubbly, stirring constantly. Remove from heat. Stir in the milk.
Cook until thickened, stirring frequently. Stir in the cheese, salt and pepper. Cook until the cheese melts, stirring constantly.

To prepare the Casserole:
Fry the bacon in a skillet until crisp. Drain and crumble.
Saute' the green onions in the butter in a skillet. Add the eggs - mix well.
Cook until soft-scrambled, stirring frequently. Stir in the mushrooms, salt and pepper. Fold in the cheese sauce and bacon. Spoon into a lightly greased 9x13 dish.
Chill, covered with plastic wrap, for 12 hours.
Bake at 350 for 30 minutes. Cool slightly before serving

I love this recipe because it uses bacon instead of sausage. Bacon and a white sauce, what more could you ask for?!?!
