1 can (20oz) pineapple chunks in juice undrained
3 cans (6oz) frozen orange juice concentrate, thawed
1 1/2 c sliced banana
1 1/2 c seedless red grapes, cut in half
1 1/2 c grapefruit sections
Thinly sliced lettuce leaves

Directions:
Directions:
Drain pineapple, reserving juice in a 2 c liquid measuring cup. Add water to measure 1 1/2c. Combine ingredients in a large bowl. Pour into a 13x9 baking dish. Cover with heavy-duty plastic wrap. Freeze 8 hrs or until firm. Let stand at room temperature for 20 min before serving. Cut into chunks and serve over lettuce.
