2 whole boneless chicken breast
2 cloves of garlic, minced
1 tsp ginger root, minced
1/8 tsp salt & pepper
1/4 cup flour
1 egg, beaten
1 cup bread crumbs
2 to 3 tbls olive oil

Sauce:
1/3 cup lemon juice
1/3 cup water
1/3 cup sugar
1/8 tsp white pepper
1 tbls cornstarch
1 dash salt

Directions:
Directions:
Cut chicken breasts in half and pound to 1/2 inch thickness. Rub chicken with a mixture of garlic, ginger, salt and pepper. Coat chicken with flour, then dip in beaten egg and press with bread crumbs. Saute in oil until golden brown on both sides and juice runs clear. Transfer to platter and keep warm. Combine sauce ingredients and bring to a boil. To serve, cut chicken into bite size pieces and pour sauce over all. To garnish top with thin slices of lemon and a sprig of parsley.

This is one dish I always look for when I eat in a Chinese restaurant. But then I have always loved lemon anything. And of course my all time favorite Lemon Meringue Pie. Hope you enjoy.
