1 c dried apricots, cut up. Soak in 1 c water for 1/2 hour. Drain and save juice
1 c sugar 2 tbsp shortening 1 egg 2 c flour 2 tsp baking powder 1/4 tsp baking soda 1/2 tsp salt 1/2 c orange juice 1/4 c juice from apricots 1/4 c nut meats
Cream sugar, shortening, and egg. Add juices. Sift in dry ingredients. Mix until flour disappears. Add apricots and nuts. Bake in loaf pan at 350º for 50 to 60 minutes. Let stand in the pan 20 minutes.
