2 boxes pine nut couscous with seasoning
fresh cilantro
2 tomatoes
1 orange or peach
1/2 pkg dried cranberries
1/2 - 1 cucumber
fresh parsley
1 T balsamic vinegar
3 T olive oil
1 t sugar
salt and pepper, to taste

Directions:
Directions:
- cook couscous according to box directions
- While cooking, prepare the following:
finely chop cilantro
dice tomatoes
cut orange into small triangle wedges
loosely chop parsley
dice cucumber
- When couscous is done, cool in refridgerator until cold to the touch.
- Add all ingredients above into cooled couscous, saving the cucumber for last.
- Mix vinegar, olive oil, salt, pepper, and sugar in small bowl, loosely toss into salad.
