4 tilapia fillets
1 cup shelled pistachios
1 tablespoon Olive Oil
3 tablespoons honey mustard
1 teaspoon each of the following: salt, pepper, cayenne pepper, paprika, garlic powder, red pepper flakes, Italian seasoning (all optional)

Directions:
Directions:
Place pistachios in food processor and process until fine. You can put a little salt, pepper, and Italian seasoning in if you wish.

Sprinkle both sides of fish with spices listed above. Hot spices can be omitted. Press spices into fish with fingers. Brush one side of fish with honey mustard, sprinkle with ground pistachio and press. Turn fish over and repeat.

Heat olive oil in large skillet. Place fish fillets in skillet and cook 3 minutes. Carefully turn fillets and cook another 3 minutes. Remove from skillet and serve.
