1 unbaked 9-inch pie crust
1/3 c. butter, melted
2/3 c. sugar
1/2 t. ground nutmeg
1 c. hot mashed cooked sweet potato
1/3 c. milk or half and half
1 t. pure vanilla extract

Directions:
Directions:
Prepare pie crust (or buy prepared crust from supermarket), set aside. Combine hot mashed sweet potatoes with remaining ingredients blending well by electric mixer, or hand mixing, using a wooden spoon. Pour into pie shell. Bake in preheated 400 oven about 30 minutes, or until golden and puffy. Serve alone or topped with sweetened whipped cream. Makes one 9-inch pie.
