Ingredients:  
2 pkg yeast
1 1/2 c warm water
2/3 c sugar
1 1/2 tsp salt
2/3 c oil or shortening
2 eggs
1 c warm mashed potatoes (can be instant)
7 to 7 1/2 c flour

Directions:
Directions:
Mix all ingredients except flour. Add flour slowly. Knead for 5 minutes. Place in greased bowl, cover, and let rise. Punch down. Spread out on floured counter. Flatten with hand and cut out rolls. Let rise. Bake at 360 for 15 to 20 minutes. Dough can be covered and refrigerated, to be used as needed.
