3 or 4 sweet potatoes 4 Tbsp. melted butter 1 1/2 c. sugar 2 eggs, beaten 1 c. evaporated milk 1/2 tsp. cinnamon 1 c. crushed corn flakes 1/4 c. butter (not melted) 1/2 c. brown sugar 1/2 c. chopped pecans
Boil and mash sweet potatoes. Add 4 tbsp. butter, 1 1/2 cups sugar, eggs, milk and cinnamon; mis throughly. Pour in buttered baking dish and bake 20 minutes at 400 degrees. While baking, prepare topping. Mix flakes, 1/4 cup butter and pecans. Sprinke on top of sweet potatoes and bake an additional 15 minutes.
I make this every year for Thanksgiving. It is always a big hit!
