Dressing:

2 tablespoons of lemon juice
2 tablespoons white wine vinegar
1/3 cup sugar
1 tablespoon vegetable oil


Salad:

cup sliced natural almonds
8 ounces (1 cups) strawberries, quartered
medium cucumber, sliced and cut in half
1 package (6 ounces) baby spinach

Directions:
Directions:
Dressing: Combine lemon juice, vinegar, sugar and oil in small batter bowl. Whisk until well blended using mini-whipper. Cover, refrigerate until ready to use.

Wash strawberries and cut into quarters.

Peel cucumber and then slice. Cut slices in half.

Wash baby spinach. Place spinach in large serving bowl; add strawberries and cucumber. Whisk dressing; pour over salad, gently tossing to coat. Sprinkle with almonds. Serve immediately.
