Ingredients:  
1 lb. crawfish tails (with some of the fat if available) (optional)
1 stick of margarine or butter
1 onion (medium)
1 bunch of shallots
2 cans of Potato Soup
2 can Cream Style Corn (I use the white)
Liquid crab boil to taste
Tony Chachere's Creole Seasoning to taste
Half & Half to desired thickness

Directions:
Saute' seasoning in margarine, add crawfish tails and saute for 10 minutes. Add soup, corn and seasoning (salt, pepper, Tony's and liquid crab boil) and cook for 20 minutes, add Half & Half to desired thickness. On low heat cook another 20 minutes.
