2 eggs (separated) ½ cup sour cream ½ cup milk ½ stick (1/4 cup) melted butter ½ cup each pastry flour and flour (I use 1 cup regular flour) 1 TBS sugar ½ tsp baking powder ½ tsp salt
Beat egg whites until stiff, set aside. Whisk egg yolks, sour cream, milk and melted butter. Add sifted dry ingredients, mix enough to blend. Fold egg whites into batter. Let rest 15 minutes. For same size pancakes, I use 1/8 cup measuring cup to measure out pancakes onto griddle. Serves 4
