6 raw medium potatoes, grated
1 raw small onion, grated
2 eggs
1/8 1 tsp salt
4 TBS flour
1 tsp parsley
Freshly ground black pepper to taste
Oil for frying enough to coat the bottom of the frying pan

Directions:
Directions:
- Peel potatoes and drop them into cold water. In a large bowl, beat eggs, add onion and beat in flour, salt, black pepper and parsley. Grate potatoes into a bowl of ice water. Drain off excess liquid from the potatoes. In order to make them as dry as possible, squeeze the potatoes in a potato bag. Stir the dried potatoes into the egg mixture.
- Preheat oven to 250.
- In a heavy skillet heat oil over high heat. Pour in potato mixture (1/3 cup for each pancake). Flatten with spatula. Fry until golden brown about 2 minutes on each side.
