1 cup grated Parmesan cheese
cup mayonnaise
8-oz. pkg. cream cheese, softened
1 garlic clove, minced
14-oz. can artichoke hearts, drained and chopped
1/3 cup finely chopped roasted red bell peppers or fresh peppers

Directions:
Directions:
- Combine Parmesan cheese, mayonnaise, cream cheese, and garlic in food processor. Process until smooth.
- Place mixture in slow cooker (*or I put these 4 ingredients into the slow cooker and mix with a hand mixer, one less thing to clean!*).
- Add artichoke hearts and red bell pepper, stir well.
- Cover and cook for 1 hour on low in the slow cooker. Stir again.
- Use as a spread for crackers, cut up fresh vegetables, or snack bread slices.

This is a favorite among family and friends, great for get togethers. I usually double the recipe for parties but have found that I usually have to cook for 2 hours instead of 1 for a doubled recipe.
