1 1/2 lb fresh broccoli spears (or 1 med head cauliflower), separated into flowerets - 2 pkgs (10 oz ea) frozen broccoli can be substituted
1 can condensed cream of mushroom soup
1/4 c milk
1/2 c shredded cheddar cheese
1 c bisquick
1/4 c firm margarine/butter

Directions:
Preheat oven to 400 degrees. Heat 1" salted water to boiling. Add broccoli. Cover and heat to boiling. Cook until stems are almost tender, 10-12 minutes; drain. Place broccoli in ungreased 1 1/2 qt round casserole. Beat soup & milk until smooth; pour over broccoli. Sprinkle with cheese. Mix bisquick & margarine until crumbly. Sprinkle over cheese. (Other option - ritz crackers, crumbled, dot with margarine). Bake about 20 minutes.
