¼ cup pine nuts toasted (in a 350°oven, 4 to 5 minutes shaking the pan often) and cooled
3 cloves of garlic, mashed w/ 3 tsp of coarse salt
¾ cup plus 1 TBSP olive oil
4 cups loosely packed fresh basil
1/3 cup Parmesan cheese

Directions:

- Combine in food processor ¾ cup of oil, mashed garlic, 1 cup of the basil and pine nuts.
- Process until nearly smooth.
- Add the remaining basil. Process until nearly smooth. Add Cheese and pulse to combine.
- Season with salt.
