˝ cup flour
Salt and pepper to taste
1 lb of sole fillets
6 TBS unsalted
2 TBS fresh lemon juice

Directions:
Directions:
Spread flour in plate, add salt and pepper. Dip the fish into seasoned flour to coat completely.
Heat 4 tablespoon of butter in sauté pan over medium high heat. Add fish sauté quickly turn only once until golden brown remove from pan add lemon juice to pan and stir in 2 tablespoons of butter to enrich sauce. Pour over fish.
