2 medium/large cucumbers
1 - 2 Tbsp cider vinegar
1 1 Tbsp sugar
- 1 tsp salt
1/8 tsp pepper
- cup sour cream
1 2 Tbsp minced fresh parsley

Directions:
Directions:
1. Peel cucumber and cut into very thin slices
2. Mix together vinegar, sugar, salt, and pepper; pour over cucumbers
3. Marinate for 20 minutes; drain off liquid, toss cucumbers with sour cream, then top with fresh parsley and serve.
