3 small acorn or butternut squash
3 green onions, chopped
1 Tbsp. oil
1 cup finely - diced celery
1 bunch fresh spinach, coursely chopped
¾ cup whole wheat bread crumbs
¼ teaspoon salt
¼ cup nuts, finely ground
1 Tbsp. butter

1. Halve and clean the squash. Bake in 350° oven for 35 - 40 minutes, or until tender.

2. Wash, dice and prepare other veggies while squash bakes. Begin sautéing when squash has been in oven for 25 minutes or so.

3. Sauté onions in oil until soft. Add diced celery. Cover and simmer on medium heat until tender. Add spinach; stir to wilt. Combine bread crumbs with salt and ground nuts. Stuff the squashes with the spinach mixture; sprinkle crumb mixture on top. Dot with butter and return to oven for 10 - 15 minutes.

Yummy! A meal in itself. I make it with cashews, almonds or pecans. All good. A good side for a meal with a vegetarian at the table.
