Eggplant, peeled and diced
Bell peppers (red, yellow and green)
Onions, diced
Carrots (small)
Potatoes ( quartered)
Olive Oil
Salt and Pepper

Directions:
Directions:
Spray a 13" x 9" casserole dish with Pam. Cut the desired amount of vegetables and place in dish. Sprinkle with olive oil and salt and pepper. Bake at 350 for 45 minutes or until tender.
