3/4 C. SUGAR
2/3 C. PUMPKIN
1 TSP. LEMON JUICE
3/4 C. FLOUR
1 TSP. BAKING POWDER
2 TSP. CINNAMON
1/2 TSP. GINGER
1/2 TSP. NUTMEG
1/2 TSP. SALT
1 C. WALNUTS, CHOPPED

BEAT EGGS ON HIGH FOR 5 MINUTES AND THEN BEAT IN SUGAR. STIR IN PUMPKIN & LEMON JUICE. STIR TOGETHER DRY INGREDIENTS & FOLD INTO PUMPKIN MIXTURE. SPREAD IN GREASED 15 X 10 X 1 INCH PAN. BAKE AT 375 FOR 15 MINUTES. TURN OUT ON TOWEL THAT'S BEEN SPRINKLED WITH POWDERED SUGAR. STARTING AT NARROW END. ROLL TOWEL AND CAKE TOGETHER LOOSELY. COOL. UNROLL AND SPREAD WITH FILLING ROLL & CHILL. FILLING: 1 C. POWDERED SUGAR, 8 OZ. PKG. CREAM CHEESE, 4 TBSP. OLEO AND 1/2 TSP. VANILLA OR RUM. ADD CHOPPED NUTS.
