Pineapple "Glaze"

1 cup sugar

2 Tablespoon flour

1 teaspoon salt

2 eggs, beaten

1 cup pineapple juice (reserved from 2 cans pineapple chunks)

1 Tablespoon lemon juice


Combine dry ingredients. Stir in remaining ingredients, heat over medium heat until thickened.

Noodles

In another pan, cook acini de pepe noodles (1 package) in water according to directions, with 1 Tablespoon oil and 1 tsp salt. Rinse with hot water, drain. Cool to room temp. Add to egg mixture. Refrigerate overnight in airtight container.

Add the following ingredients, stir, and refrigerate until chilled (or overnight again for best results).

Salad Ingredients

3 cans mandarin oranges, drained

2 cans 20 oz. pineapple chunks (drained from earlier)

1 can 20 oz. crushed pineapple, drained

1 large carton Cool Whip

1 pckg. Miniature marshmallows

1 cup coconut

This recipe encourages to refrigerate overnight for best results, however I didn't notice much of a difference without refrigerating. Also this makes A LOT of salad, so it's good for large parties, cut it in half or even a quarter for smaller functions!
