1 (6oz) package Uncle Ben's long-grain and wild rice mix
1 cup Ocean Spray Craisins
1 cup fresh broccoli, chopped
4 green onions, chopped
3 celery ribs, thinly sliced
1/2 cup sweet-and-sour dressing (see below for recipe)
*optional add cooked diced chicken

1/2 tsp. paprika
1/2 tsp. celery seeds
1 tsp. Dijon mustard
1/2 tsp. salt
1/2 tsp. grated or finely chopped onion
1/4 cup sugar
1/2 cup vegetable oil
1/4 cup vinegar + 1 tbsp. balsamic vinegar

Prepare rice- according to package instructions; cool.

Combine rice, cranberries, and next 3 ingredients; add dressing, and stir gently. Cover and chill at least 2 hours.

For dressing, combine all ingredients in a jar. Cover tightly and shake vigorously. Chill several hours. Shake again before serving over salad.
