1 1/2 cups cooking oil
2 cups sugar
3 eggs
3 cups AP flour, sifted
1 tsp. baking soda
1 tsp. vanilla
3 cups finely chopped apple (peeled)
1 cup chopped pecans
1 tsp. salt
1 tsp. cinnamon

Cream oil and sugar; add eggs, one at a time and beat well together.

Sift flour with soda, salt and cinnamon and add to oil mixture along with vanilla. Fold in finely chopped apple and chopped nuts.

Bake in a greased tube pan for one hour at 375.
