1 pkg. (4 oz.) Baker's German Sweet Chocolate
1/2 cup boiling water
1 cup butter or margarine
2 cups sugar
4 eggs, separated
1 tsp. vanilla
2 cups AP flour

1 1/2 cups evaporated milk
1 1/2 cups sugar
4 slightly beaten egg yolks
3/4 cup butter or margarine
1 1/2 tsp. vanilla
1 tsp. baking soda
1/2 tsp. salt
1 cup buttermilk

Melt chocolate in water bath, cool.

Cream butter and sugar. Beat in egg yolks. Stir in vanilla and chocolate. Mix flour, soda and salt. Beat in flour mixture, alternately with buttermilk.

Beat egg whites until stiff peaks form; fold into batter.

Pour batter into 3 9" layer pans, lined on bottom with waxed paper. Bake at 350 for 30 minutes.

Cool before frosting.

Combined evaporated milk, sugar, egg yolks, butter or margarine and vanilla in saucepan. Cook and stir over medium heat until thickened.

Stir in Baker's Angel Flake Coconut and chopped pecans. Cool and spread over each layer and sides of cake.

My Dad's all-time favorite dessert, this was served at every birthday of Dad's and any other special occasion in his honor.

It was also left out for Santa Claus on Christmas Eve when Randy and I were children (much to our horror - everyone knew that Santa would prefer chocolate cake!!).

I didn't care for coconut as a child, but this recipe became one of my favorites as I grew up. It actually became the birthday cake of choice for Randy, Sara and Rosie. My kids (much smarter than me) and Robert have always loved this cake!
