2 cups graham cracker crumbs
2 tbsp. sugar
1/2 cup butter, melted
4 8 oz. pkg. cream cheese, softened
1 3/4 cups sugar
7 eggs
3 8 oz. cartons sour cream
1 tbsp. plus 1 tsp. vanilla

Directions:

Combine graham cracker crumbs, sugar and butter. Firmly press mixture into a greased 9" springform pan. Chill thoroughly.

Beat cream cheese in large bowl until light and fluffy. Gradually add sugar. Add eggs, one at a time, beating well after each addition. Stir in sour cream and vanilla. Mix well. Pour into pan.

Bake at 350 for 1 hour and 5 minutes. Turn oven off. Allow cheesecake to cool in oven for 4 hours. Do not open oven door.

Remove from oven, loosely cover and refrigerate 12 hours.
