1 lb. penne or other short pasta
1/4 c. olive oil
2 garlic cloves, thinly sliced
2/3 lb. cherry tomatoes (2 cups) halved or quartered
1 t. dried oregano
1/4 t. crushed red pepper (optional)
1/4 c. sliced black olives
1/4 c. chopped fresh parsley
1/4 c. grated parmesan cheese, plus more for serving

Directions:

Cook pasta according to instructions.

Meanwhile, in large skillet, heat olive oil over medium heat. Add the garlic and cook, stiring, until golden brown, about 1 minute. Add tomatoes, oregano, crushed red pepper, 1/2 t. salt, and 1/4 t. pepper.. Reduce the heat to low and cook, stirring, until tomato juices run, about 3 minutes.

Add the pasta, olives, parsley, and 1/4 c. Parmesan to the skillet and toss to combine. Serve with more cheese if desired.
