6 shots of Espresso
2 eggs
1 c. granulated sugar
8 ounces mascarpone cheese
2 c. heavy cream
1 package of Lady Fingers (preferably from Italian grocer)
2 T. powdered sugar
1/2 t. unsweetened cocoa powder

Directions:
Directions:
In medium saucepan, combine eggs, 1/2 c. sugar and 1/4 c.
coffee. Using a wire whisk, beat egg mixture over medium-
low heat for 3-5 minutes, until mixture is frothy and thickened;
let cool.

In small cup, combine remaining 1/2 c. sugar and remaining
espresso.

In medium bowl, combine mascarpone cheese and egg
mixture; beat with electric mixer until smooth.

Dip enough lady fingers to cover an 8" X 111/2" pan into the
coffee and sugar mixture. Dip them quickly as they will
absorb moisture quickly. Then cut the lady fingers in two
length-wise so a thin layer of cookies will cover the pan.
Spoon the cheese mixture over lady fingers. Place the
remining lady fingers over the cheese mixture.

In medium bowl, beat cream and powdered sugar with electric
mixer until stiff peaks form; spread over lady fingers. Sprinkle
with cocoa.

Refrigerate for 3-4 hours.
