8 medium red potatoes
1/3 cup chopped onion
1/3 cup margarine, melted
1 cup shredded cheddar cheese
2 8oz. cartons sour cream
1 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
Scrub and cook potatoes in boiling water about 30 minutes or until tender. Drain and cool slightly.

Peel and cut potatoes into 1/2" cubes.

Saute onion in margarine in a small skillet until tender.

Combine potatoes, onioin mixture, and remaining ingredients in a large bowl and mix gently.

Spoon potato mixture into a lightly greased 13 x 9" baking dish.

Bake at 350 for 30 minutes.
