1 large onion, diced
2 T. butter or margarine
2 c. cooked white rice
2 eggs, beaten
1 c milk
1 c (4 oz) shredded swiss cheese
1/4 t salt
pepper to taste
chopped fresh parsley for garnish
paprika for garnish

Directions:
Directions:
Preheat oven to 375 F. In a large skillet, sauti the onion in the butter for 5 to 7 min. or until golden. Stir in remaining ingredients, mixing well, and turn into a greased 1 1/2 qt baking dish. Bake for 20 to 25 min until set. Sprinkle with chopped parsley and paprika to garnish.
