1/4 c. olive oil
3 medium onions, chopped
2 cloves garlic, minced
12 c. tomatoes, peeled, cored and chopped
3 (12 oz.) cans tomato paste
3 Tbsp.. brown sugar
1 Tbsp.. dried oregano
4 tsp. salt
2 tsp. dried basil
1 tsp. dried black pepper

Directions:
Directions:
Heat oil in a large pan. Saute onions and garlic until tender. Add rest of ingredients. Heat to boiling, then reduce heat. Simmer, partially covered, for two hours, stirring occasionally. After it has simmered, either can it or cool completely and store in the freezer. Can be used for sauce for pasta or even pizza.
