2 lb bag diced, frozen hash brown potatoes
3/4 butter, melted
1 tsp salt
1/2 tsp pepper
1 c onion, chopped
1 pint sour cream
1 can cream of mushroom soup
2 c grated cheese (colby, cojack, or cheddar)
Crumb topping w/butter (optional)

Mix all ingredients together. Top with crumb topping
if desired. Spray pan with Pam cooking spray.
Bake in 9 X 13 pan at 350 for 45 minutes.
