Ingredients:  
1/4 c. finely chopped onion
1/4 c. finely chopped carrot
1/4 c. finely chopped celery
2 T. butter
1/3 c. flour
2 c. chicken broth
2 c. half and half
8 oz. sharp American cheese

Directions:
Directions:
Cook vegetables in butter until tender. Stir flour into broth until smooth. Add broth and cream to vegetables. Cook and stir until thick and bubbly. Add cheese and season with red pepper flakes, salt and pepper. Stir and cook until cheese is melted.

1/2 Velveeta and 1/2 sharp cheddar can be used in place of American cheese. Tabasco sauce also makes a good seasoning.
