4 strips bacon
1onion, thinly diced
1 c. Gruyere cheese, cubed
1 c. Swiss cheese, cubes
c. freshly grated Parmesan
1 c. whipping cream
tsp nutmeg
tsp salt
tsp pepper

Directions:
Directions:
Preheat oven to 450. Line 9" pie pan with pastry and bake for 5 min. Cook bacon until crisp. Remove and pour off all but 1TBS fat. Cook onion until transparent. Crumble bacon, sprinkle bacon onion and cheese over inside of partly baked pastry. Combine eggs, cream and spices and strain over onion-cheese mixture... Bake 15 minutes, reduce oven to 350 and bake until knife inserted 1" from edge comes out clean (about 10-20 minutes longer). Serve immediately. Makes 6-10 servings
