6 boneless, skinless chicken breast halves; 3 tbsp. plus 1/4c. fresh squeezed Lime Juice; 2 tbsp. Olive Oil; 1c. unsweetened Coconut Milk; 1/2c. Heavy Cream; 3 tbsp. fresh Ginger,minced & peeled; 1 1/2 tsp. Salt; 1/2 tsp. Pepper; 1/3c. Cilantro, coarsely chopped; 3 tbsp. Shredded Coconut, toasted.

Prepare the grill. In a large bowl, coat the chicken with 3 tbsp. lime juice and the oil. Let marinate in refrigerator for 30 minutes. In a medium saucepan, whisk together 1/4c. lime juice, coconut milk, cream, ginger, salt, and pepper. Heat until small bubbles form around the edge of pan, set aside. Grill chicken, about 6-8 minutes. Reheat the sauce, but don't let it boil. Transfer chicken to platter and sprinkle with cilantro and toasted coconut. Serve over Island Rice.
